TableOne Series by Chef Robert Graham

TableOne, the monthly chef’s table cooking event that documents the culinary journey of Royal Sonesta Houston Executive Chef Robert Graham, returns with its inaugural 2020 dinner. Limited to 10 guests, the next edition of this popular series kicks off on February 8 at 7 pm with an extensive menu focused on romance to celebrate the upcoming Valentine’s Day weekend. TableOne provides the perfect venue for guests who want an intimate and personal kitchen experience with one of the only chef’s tables in the city.

February’s menu, with it’s romance theme includes: Grilled Romaine and Burrata, Salmon Crudo with avocado, beets, yuzu and truffle. The third course is Ginger Poached Oyster topped with caviar, cous cous, and lemongrass cream leading into Pan Seared Loup de Mer with cauliflower, hazelnut, soy and capers.

The fifth course will offer up fresh homemade Ricotta Ravioli combining egg yolk, sage, and brown butter. A beautiful Buttered Poached Lobster dish will be served with crispy sweetbreads and parsnip, finished off with a Banana, Chocolate and Hazelnut dessert to wrap up the night together. As the courses progress, wines from Napa Valley, Willamette Valley and Columbia Valley hand-selected by Graham will accompany the dishes.
